Ingredients:

Small eggplant – one and a half kilograms
Dried and finely chopped red bell pepper – 500 gm
Walnuts – 120 grams
Coarse salt – as needed

The method of work
1- Remove the stems of the eggplant and wash it well.
2- Boil the eggplant in a pot of water for about 10 minutes.
3- Then put the eggplant in the colander to get rid of the water in it, then salt it well from the outside.
4- Slit the eggplant vertically, then stuff it with salt and return it to the colander.
5- Put a plate on the eggplant in the colander to press it and drain the water well. Leave it in this state for two days.
6- To prepare the filling, in a large bowl, mix the red peppers and walnuts with a teaspoon of salt.
7- Stuff the eggplant with a tablespoon of the mixture, then return it to the colander with a plate on its face for two days.
8- Arrange the eggplant in jars and cover it with olive oil.
